Fresh off a trip through agave's many diverse regions, the Vaca Restaurant / Mixing Glass Team is bringing the best minds and products we experienced during our travels for a one-night-only dinner and discussion. 

In Michoacán and Jalisco, we had a truly remarkable experience discovering how the agave distillate industry is at a pivotal moment, precipitously near to losing its heart and character. It is our hope that, through a conscious support of responsible producers and resource conservation, we have a chance to save the tradition and heritage of the agave category. 

Beyond the spirits, you'll have the opportunity to shake the hands and hear the voices of each spirit's producer; a rockstar lineup of the truly remarkable individuals fighting for the heart of agave. Chef Amar Santana has developed an exquisite, Mexican-inspired menu to complement a stable of truly unique and terroir-driven tequilas and mezcales. 
 
We are honored to host:
David Suro of Siembra Valles, Siembra Azul and Suro Imports;
Pedro Jimenez of Mezonte, a brand noted for preserving the production and practices of traditional agave spirits;
Monica Leyva of Pajarote, a new-to-market Mexican liqueur line that is as vivid and dynamic as the spirits;
Emilio Vieyra, the 6th generation distiller of Don Mateo & Siembra Metl mezcales;
Salvador Rosales Trejo, Owner of Siembra Valles & Cascahuín, a distillery first opened in 1904 in El Arenal, Jalisco.
